The Authentique Pro, made from chamotte, is the enhanced version of the domestic model offering better resistance to wear and tear. It is therefore perfectly suited to private individuals who are passionate about cooking on a wood fire. It is also an alternative for professionals with limited space. Specialised in fast cooking: pizzas, grills, stews and even bread occasionally. The base is made of compressed and fired refractory slabs, which are highly resistant to wear.

There are several ways to optimise the use of your L’Authentique Pro wood-fired oven:
- Carefully read the assembly instructions provided and follow them thoroughly. Pay attention to the recommended materials and any specific instructions, such as where to seal the oven when necessary. It is recommended to keep these instructions for future reference. Additionally, noting down the letters on the elements of your oven can be helpful in case you need to replace any parts that may break during installation;
- For dome or corner insulation, choose a load-bearing slab with optimal dimensions of 170×150 cm to provide more space for insulation;
- It is also important to think about your smoke evacuation before buying the oven. This can be achieved through either a flue pipe or a chimney. The connection pipe is the most important accessory not to overlook, for those who wish to use flue pipes;

What is the difference with Le Gastronome Pro? The Gastronome is a fully equipped oven that is an excellent companion, especially for baking bread. The Authentique Pizzaiolo, although requiring slightly more handling for bread, is an oven that is just as efficient and easy to embellish. Read more about it here.
You want to bake bread? Insulate your oven with mineral wool (or Ephrem insulating fibre) + sand, and go for the authentic insulating door. This combination will offer you great comfort when baking bread: slow heat restitution thanks to the mass effect of the sand. Additionally, our L’Authentique insulating door, reinforced with pozzolan, provides excellent insulation for the baking chamber.
Interested in grilling? The barbecue grid is a great accessory that complements the cooking kit of your oven. It adds versatility to your oven, allowing you to use it for barbecuing as well. You can place a cast iron dish under the grill to collect the grease while keeping the embers in an arched shape inside the oven. Alternatively, you can leave the floor bare and, bring the embers back over the fat to burn it off, your oven will be as good as new.
Are you planning to install your oven indoors? This is perfectly possible, as long as the oven is installed in a ventilated room (with a window) and you do not store wood or flammable products nearby. The duct shutter plays a crucial role in maintaining proper airflow: when closed, it prevents cold air from entering the room.

With limited available space, which professional wood-fired oven model would be the most suitable for me?
In this situation, we recommend L’Artisan 110, which requires a minimum slab size of 170x170cm. If that is still too large for your space, an alternative option is the Le Gastronome Pro, which needs a minimum load-bearing surface of 142x132cm. If your project involves a pizzeria, you can also opt for Le Nomade 120 with the support table options, with a required space of 142.5×142.5cm. This oven is specially designed for pizza making.

Which model is the most common for restaurants?
The L’Artisan 130 is the prevailing choice among restaurants and pizzerias when it comes to Ephrem professional wood-fired ovens. Its size and capacity make it suitable for most establishments, offering a more convenient working environment compared to smaller ovens.

Which ovens are suitable for installation in a truck or food truck?
The Nomade 120 is the most suitable and largest model for installation in a truck or food truck. It is specifically designed for pizza making and is lightweight. With its metal support table, it occupies a space of 142.5×142.5cm and weighs 555kg (including support). For a rotating model, the 90 Rotatif is a good choice, allowing for quick cooking of 4 pizzas at once. If space is limited, the Authentique Pro or Le Gastronome Pro are options with an internal diameter of 90cm and a space requirement of 142x132cm. Metal supports are not provided for these models, but can be arranged by a van fitter or metalworker. Whichever oven you choose, don’t forget to insulate the top and bottom, and specify during the ordering process that it will be installed in a truck, so appropriate assembly instructions can be provided.

What is the estimated timeframe for delivery?
You have the option to pick up our domestic wood-fired ovens (excluding combis and flambeurs) directly from the factory on the same day of purchase. Professional ovens can also be picked up from our premises within 2 days. Please make sure you have a suitable vehicle to transport the weight of the oven and a pallet of the required size (100x120cm for domestic ovens or 110x130cm for professional ovens). If you choose home delivery, our carrier service ensures that you receive your order within 8 to 10 days from the time the order is processed for mainland France. For Corsica and international deliveries, please contact us for further information.
