Form into a ball, then leave to rest at room temperature (26-27\u00b0C) for 1 hour. <\/p>\n\n\n\n<p><strong>3.Division &amp; rest<\/strong><br\/>Divide the dough into three 250-300 g pieces. Preheat your wood-fired oven <strong>until the top is completely white<\/strong> &#8211; a sign that the temperature is optimal. This heat-up takes about 2 hours.  <\/p>\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p><strong>Checking the hearth temperature :<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Without a thermometer<\/strong>: throw a pinch of flour onto the hearth. If it burns instantly, the hearth is too hot.
